WE FOLLOW A VERY STRICT PROCESS THAT STARTS BY THE TERROIR SELECTION. WE GROW OUR AGAVES FOR AN AVERAGE OF 10 YEARS IN THE REGION OF SAN LUIS DEL RIO, A SMALL VILLAGE IN THE MIDDLE OF SOUTH MOUNTAINS OF OAXACA.

THIS TERROIR HAS AN EXOTIC COMBINATION OF HIGH ALTITUDE, HOT & DRY WEATHER MOST PART OF YEAR AND MARINE HUMIDITY THREE MONTHS A YEAR, THAT CREATE THE MINERAL AND HERBACEOUS CARACTER OF SANTO DE PIEDRA.
