The Santo de Piedra Pastorale Series is born from a deep reflection on the future of luxury and sustainability. Its name honors Beethoven’s Sixth Symphony—Pastorale—a tribute to nature, harmony, and renewal. In that same spirit, six remarkable artists from diverse disciplines will each craft their own visionary interpretation of mezcal—unbound by tradition and reimagined through their unique creative lens.

Massimo Bottura

Shaped by the brilliant mind of Chef Massimo Bottura. Bringing emotion, memory, and a profound sense of place, Bottura selected a blend of ultra-rare agaves, harvested by hand in the remote southern mountains of Oaxaca, complementing the vision of the collection by incorporating juniper wood at two key moments in the production process, just like he does with Balsamic Vinegar at Modena—subtly evoking the character of a spirit that flirts with the idea of mezcal aspiring to be a gin. The result is a poetic tension—a bold, sensorial confrontation with the conventions of tradition, owning the spirit of renewal found in Beethoven’s Sixth Symphony, and rendered in the most beautiful and unexpected way.

Only  1,506 bottles, this rare release remain available through carefully selected channels around the world.

Techniques borrowed from

Aceto Balsamico

Crafted from Tepeztate a very rare and wild agave, and incorporating an innovative use of juniper wood during key stages of production, this mezcal is deeply shaped by its unique terroir. The result is a spirit of remarkable depth—unfolding with warm notes of leather and caramel, delicately balanced by a peppery brightness and subtle mineral saltiness. These latter notes are the gift of our land, born from the rare convergence of Pacific and Atlantic winds that shape the soul of our domaine in Oaxaca southern mountains. To close the circle of this collection, each bottle is carefully packed into a handmade box of treated wood, sealed with natural beeswax, carefully sourced with sustainability in mind.
